Shortcake tart with apricots will surely please your family. The dough and the sprinkle contain the same ingredients.


For shortcrust pastry:

Flour - 200 g
Sugar - 2 tbsp.
Vanillin - 1 g
Butter - 70 g
Egg - 1 pc.

For filling:

Apricots - 400 g
Sugar - 150 g
Starch - 2 tbsp.

For sprinkling:

Flour - 3 tbsp.
Butter - 40 g
Sugar - 3 tablespoons

Shortbread cake with apricots is a wonderful summer pastry that allows you to diversify your homemade tea party. A sand basket full of apricot filling is a great treat for your family.

Adjust the amount of sugar in the filling to your taste, depending on the sweetness of the fruit. My apricots were sour, I added sugar 150 g.

To make a shortbread cake with apricots, take the products from the list.
First, prepare a sand basket. To do this, sift the flour into a bowl, add sugar, vanilla and butter slices. Grind everything into crumbs and add the egg. We collect the dough into a ball.

We put the dough into a mold with a diameter of 22 cm and distribute it according to the shape, forming sides about 3 cm. We remove the form in the freezer for the time while preparing the filling and sprinkling.

For sprinkling, we also make crumbs by mixing flour, sugar and butter.
Separately, mix 150 g of sugar with starch. We will sprinkle the apricot filling with this mixture.

Break apricots in half, remove the seeds. Remove the dough form from the freezer, put the apricots with the slice down in one row, sprinkle with a slightly prepared mixture of sugar and starch, then lay out another row and sprinkle with the remaining mixture. Then sprinkle crumbs on top, covering apricots.

Preheat the oven to 200 degrees and bake a shortbread cake with apricots for 30-35 minutes. Remove the cake from the mold, let it cool, then you can cut into portions and treat relatives.
