Ingredients for the dough:

Water - 150 ml
Salt - 2 tsp.
Sugar - 1.5 tbsp. l
Vegetable oil (odorless) - 150 ml
Flour - 600 ml (390 g)

Ingredients for the filling:

Cottage cheese (moderately moist, closer to dry) - 350 g
Lemon zest - ½ pcs.
Sugar - 3 tbsp. l
Vanilla sugar - 1 tsp.
Egg (medium-sized) - 1 pc.
Starch - 1 tbsp. l

Cooking pies:

1. Dissolve salt and sugar in warm water. Add vegetable oil, then transfer the flour to a bowl. Knead the dough. Knead the dough instantly, literally in 2-3 minutes.

2. Collect the dough into a ball, transfer to a bag and let rest at room temperature for 20-30 minutes. If the kitchen is hot, put the dough in the refrigerator.

3. In the meantime, work on the filling. Grind the cottage cheese with a sieve or mince. Add the zest of lemon (be sure to add, the taste will sparkle in a new way), granulated sugar, vanilla sugar, egg and mix well. Now enter the starch (preferably with a sieve to use a large filling area) and knead thoroughly again.

4. Roll the filling into the sausage and divide into 4 parts. Each of the parts is another 6. Form small rollers. They should get 24 pieces (by the number of pies).

5. Similarly, divide the dough. First in four parts. Remove three of them in a bag so that they do not get worn out. Divide the rest into 6 identical parts and roll the balls. Roll each ball into a 12 by 15 centimeter rectangle. The dough is very plastic and obedient.

6. On a narrow edge, lay out the filling, cover it on the sides with dough (carefully, otherwise the cottage cheese will come out when baking) and roll the pie with a roll. It is not necessary to pinch the seam. Act until the dough and filling are over.

7. To the yolk, depending on its size, add from 1/3 to 1/2 teaspoon of water. Shuffle.

8. Put the pies on a baking sheet covered with baking paper, seam down. Lubricate. One yolk is enough to cover products in three layers. As a decor, you can use poppy seeds.

9. Send the cakes to the oven preheated to 200 degrees Celsius to the middle level. They take about 25 minutes to cook.
