Marshmallows airy and springy marshmallows from available ingredients. The recipe is very simple, but you get cool snacks at home. It’s really fun to cook them with the kids.

The original recipe used corn syrup, but I cooked without it. According to the author of the recipe with corn syrup, the marshmallows texture will be better.

You need to store such marshmallows in a bag or in a closed container, in the open air marshmallows begin to dry out.


Gelatin (Instant) - 12 g
Water - 120 g
Sugar - 200 g
Vanilla Sugar - 20 g
Salt - ¼ tsp
Corn syrup (optional) - 60 g

For sprinkling:

Corn starch - 1 tbsp. l
Powdered sugar - 1 tbsp. l

Cooking Marshmallows:

1. Marshmallows at home. Pour gelatin with 60 grams of water and leave to swell for 10-15 minutes. Then warm the gelatin to a hot state, but do not let it boil. I warm gelatin in a water bath.

2. Pour 60 grams of water into a saucepan, pour 200 grams of sugar into it. Cook over moderate heat, without stirring, until sugar is completely dissolved and bubbles appear. It takes about 15 minutes. If you have a thermometer, then the temperature of the sugar syrup should be 115 degrees. If there is no thermometer, then drop a little syrup in cold water. If you can form a soft plastic ball with your fingers, then the syrup is ready.

3. Pour hot gelatin into the container, add salt and vanilla sugar. Beat at a slow speed for 1 minute until the vanilla sugar and salt dissolve. Then, add a thin stream of hot sugar syrup. Beat for 8-10 minutes until a fluffy white mass is obtained. You can add lemon juice, dye or any other flavoring.

4. Fill a square with cling film and grease with vegetable oil so that the marshmallows do not stick. I have a shape of 16x22 cm. Lubricate the shovel with vegetable oil and shift the marshmallows into shape. If necessary, level the surface by wetting your hands with cold water. Leave the marshmallows to stabilize for 2-3 hours.

5. Cut the marshmallows into cubes and roll in a mixture of corn starch and powdered sugar. Soak the knife with water or grease with vegetable oil so that it does not stick to marshmallows.
