Satai - popular in Southeast Asia, kebabs, in Muslim countries (Malaysia and Indonesia) - mostly chicken. Kebabs with peanut sauce. Always served with peanut sauce.

Each country has a different interpretation of satay. Indonesian satay, usually sweeter due to the use of sweet soy sauce (Kecap Manis), while the Thai satay marinated in coconut milk and it turns out not so sweet.

Malaysian satay preparing popular in Malaysia ingredients: shallots, lemongrass, turmeric (kunyit) and ground coriander. Meat or chicken is marinated for a long time previously, most often in the final mixture of spices from the shop.

4 things. - Chicken legs (or breast without bones and skin)

For the marinade:

1 tsp ground coriander
2 stalk lemongrass (white part only)
6 shallots bulbs
2 cloves garlic
4 tablespoons vegetable oil
1 tsp chili powder
2 tsp ground turmeric
4 tsp Kecap Manis - Indonesian sweet soy sauce
1 tsp oyster sauce (Oyster sauce)

For the garnish:
1 cucumber slices
1 small onion (cut in quarters)

For the peanut sauce:
1.5 cups of unsalted roasted peanuts
1 cup water
1 tablespoon sweet soy sauce (Kecap Manis)
1.5 tablespoons sugar (preferably palm)
1/8 tsp salts
1/4 cup Butter
1 tablespoon tamarind pulp (soak in 1/4 cup water for 15 minutes and squeeze the juice of tamarind pulp throw) - can be replaced with lime for the sour

A paste of spices:
6-8 pcs. dry red chili pepper (remove seeds and soak in warm water)
3 cloves garlic
3 shallots bulbs
2 stalk lemongrass (white portion)
2.5 cm root ginger (galangal is preferred)
1 tablespoon ground coriander (optional

Cooking barbeque.

1. Cut the meat into small cubes.

2. All the ingredients for the marinade in a blender grind to a paste. If necessary, dilute with a little water.

3. Marinate the chicken in the marinade paste for 10-12 hours.

4. skewered chicken on skewers and roast on the grill for 2-3 minutes on each side.

5. Satai serve hot with slices of cucumber and onions.

Preparation of peanut sauce.

1. Grind the peanuts in a mortar or blender.

2. Finely chop and grind paste of spices. Heat the oil in a frying pan and fry the spice paste to the strong flavor.

3. Add the pasta peanuts and tamarind juice (or lime), water, sugar, sweet soy sauce and mix well.

4. Simmer over low heat until. Constantly stir. The consistency of the sauce - smooth.

5. Serve peanut sauce to room temperature satay skewers.
