We need the following ingredients:
• white dry wine - 2 tablespoons;
• sugar - 0.1 kg and 1 tablespoon;
• egg yolks - 3 pieces;
• water - 0,1 l;
• cream - 0.3 liters;
• gelatin - 30 grams;
• fresh mint - 0,1 kg.
Cooking method:
1. Pour the water into a saucepan. Add sugar. Stir and bring to a boil. Add the mint and cook for 2 minutes. We grind syrup through a sieve.
2. Pour gelatin with a little water. Leave to swell. Then we mix it with mint mashed potatoes and put it on a water bath. Stirring constantly, cook until the gelatin is completely dissolved.
3. Whisk yolks with one tablespoon of sugar until a white foam forms. We put it in a water bath. Stir with a whisk and cook until lightly thickened.
4. Immediately put the pan with yolks in a bowl with ice. Add wine and continue to whisk until foam forms along the edges.
5. Whip the cream in a thick foam. Mix with mint mashed potatoes and yolks. We lay out in the molds. We put in the freezer for 5 hours.
