Creme brulee (crème brûlée) is a stunningly delicious French dessert consisting of cream, egg yolks and a crispy sugar crust.

Ingredients: (~ for 6-8 servings - depending on the size of the molds)

8 yolks
800 ml cream of medium fat content (15-20%)
150 g sugar
10 g vanilla sugar
1 teaspoon freshly ground cardamom
brown or granulated sugar for crust

1. Separate the yolks from the proteins. Pierce each yolk with a fork so that the flesh flows out, and the skin remains on the fork, discard the skins. This is done in order to avoid an unpleasant aftertaste.

2. Put the cream warm on a small fire. While they are warming up - mix the yolks with cardamom, vanilla and regular sugar with a fork. Pour in hot cream. Stir again.

3. Pour the resulting mixture into molds. The molds should be as flat as possible so that the creme brulee bakes well.

4. Further, if you are sure that the temperature regime of your oven is working, just put the molds in the oven at a temperature of 100 ° C, and bake for about 1 hour 20 minutes. If you are not completely sure about your oven (like me :), then it is better to take a deep pan, if available, or a large baking dish to fit all the tins, and pour boiling water into it to about half the height of the tins. Now you can bake in the oven already at temperatures up to 160 ° C and not be afraid that the creme brulee will turn into an omelet 🙂

5. When the creme brulee is ready, remove the molds and refrigerate them for at least 3 hours so that the contents cool well.

6. Sprinkle chilled creme brulee with brown or granulated sugar and place it under the grill (preferably gas) in the oven to caramelize the sugar, or if you have a special burner for roasting, you know what to do.
