Water - 75 ml
For cream:
Milk - 900 ml
Eggs - 10 pcs.
Sugar - 180 g
Honey - 45 g
For the test:
Egg - 1 pc.
Sugar - 25 g
Flour - 25 g
Honey - 10 g

Cooking:

1. Let's start with the preparation of caramel: heat sugar and water in a saucepan to make a thick liquid mass. Let it cool slightly and pour into heat-resistant glasses.

2. Mix eggs, milk, sugar and honey, then heat the mixture in a water bath (at about 75 degrees). To get rid of all the excess, we pass the mass through a strainer or cheesecloth, and then pour into glasses. At this stage, the glasses should fill approximately 3/4.

3. Finally, for the top layer of the dough, beat the eggs with sugar and honey, add the flour. We mix everything into a homogeneous mass and lay it out in glasses.

4. Put the glasses in a deep baking dish, pour boiling water on the bottom of the form. We put the mold in an oven preheated to 150 degrees for 40-45 minutes in the upper and lower airflow mode.

5. Put the finished flan in the refrigerator for about 4 hours.
