Crispy pasties on vodka.

One of the most popular modern options at home: dough for pasties with vodka (gives a characteristic crunch), a filling of a mixture of pork and ground beef (optimal taste) and roasted in sunflower oil.
Calculation of ingredients for 6 pasties.

Ingredients.

wheat flour (premium) - 200 g
water - 100 ml
vodka - 1 tablespoon
sugar - 1/3 tsp
salt - 1 pinch
sunflower oil - 2 tbsp. l
sunflower oil - for frying

For filling:

minced meat - 175 g
onions (medium) - 1 pc.
salt, pepper, other spices to taste.

COOKING METHOD

Sift flour into a deep bowl.
Add sugar and salt to warm water, mix until dissolved. In a sifted flour, make a small depression in which to pour the cooked syrup, add vodka and boiling vegetable oil (optional).
Mix.

Then transfer the resulting mass to a flat surface (for example, a countertop), sprinkled with flour.
Knead the dough for pasties with your hands until a homogeneous consistency.

Cover with a towel and leave for 10 minutes, then again knead a couple of minutes. Repeat the process 2 more times. The dough prepared by this method can be used immediately, without leaving it alone.

Cooking the filling. Cut the peeled onions into pieces, then chop with a meat grinder or a blender.

Mix the minced meat with onion, salt and pepper. Add a little water to make the filling semi-liquid and fry in its own juice. Then the pasties will turn out tender and juicy.

Water for diluting minced meat can be replaced with milk, kefir, mayonnaise or broth. Another way is to put in each cheburek a small piece of butter.

Sprinkle flour on the work surface and roll out the dough with a thin layer (about 3 mm). Using a plate, cut circles with a diameter of 15-20 cm from the dough.

Put the filling on one part of the circle, cover with the second half of the dough on top.

Pinch the edges with your fingers. To prevent juice from flowing from pasties when frying, make notches with a fork at the edges.
Heat a deep skillet with vegetable oil.

Fry pasties on vodka on both sides over medium heat until golden brown (about 3-5 minutes).
