Yeast-free cake. Cheese cake on cottage cheese dough.
It turns out a very tasty cake with a moist and delicate crumb, in which there is more cottage cheese than flour.

Just think, in each cake, 100 grams of cottage cheese, while the crumb itself is very porous and similar to yeast.

According to this recipe, Easter cake is not only very tasty and fragrant, but also healthy, which I can’t get enough of.

Regarding the glaze, it turns out to be moderately sweet, which is a huge plus, and it only takes 1 minute to cook, dries well and does not crumble at all.

Glaze tastes like white chocolate. For the preparation of Easter cakes, you will need 3 forms with a diameter of 9 cm and a height of 8.5 cm. All ingredients must be at room temperature.

Ingredients (for 3 pieces):

Cottage cheese 5% - 300 g
Eggs (C0) - 3 pcs.
Sugar - 160 g
Vanilla Sugar - 20 g
Butter (melted) - 70 g
Baking powder - 15 g
Lemon - 0.5 pcs.
Salt - 1 pinch
Dried fruits - 130 g
Flour - 230 g

For glaze:

Condensed milk - 3 tbsp. l
Milk powder - 3 tbsp. l

Cooking Easter cakes:

1. Grind cottage cheese through a sieve or grind with a blender until smooth.

2. Beat eggs with sugar, vanilla sugar and a pinch of salt until a lush light mass. Add melted butter at room temperature and the zest of half a lemon. For a pleasant yellowish color of the crumb, you can add ¼ tsp. turmeric, but do not overdo it so that its taste is not in the ready-made cake. Then add the frayed cottage cheese in parts, mix with a mixer at a slow speed until smooth.

3. Mix the flour with a baking powder, first we introduce about 200 grams of flour, then add gradually, looking at the consistency of the dough: it should be thick, very sticky and viscous. Do not add too much flour, its amount depends on the moisture content of the cottage cheese and the flour itself, as well as the size of the eggs.

4. Add dried fruits or candied fruits. They need to be pre-steamed in boiling water for 5-10 minutes, very well dried with paper towels. Then we mix them well in the dough.

5. Lubricate the molds with vegetable oil, put in each about 330 grams of dough. With a spoon greased with vegetable oil, we level the surface of the cake, making it a little rounded.

6. Bake for 40-45 minutes at 160-170 degrees at a level slightly below average. In the last 3-5 minutes I turn on the upper grill and convection so that the cakes are well browned.

7. The cooled cakes are greased with glaze. To prepare the glaze, we mix condensed milk and powdered milk until smooth (instead of milk powder, you can use infant formula or, in extreme cases, icing sugar, but with icing the icing will be very sweet).
