Chahokhbili from chicken. Chahokhbili - hot aromatic chicken ragout, moderately hot, with a bright and rich taste, as it is prepared in its own juice with minimal addition of liquid.

The name of this dish comes from the Georgian word "jokhobi", which means "pheasant". But do not be upset if you do not have a carcass of freshly shot game in your fridge. You can safely use a chicken.

Cooking method:

We chop off the chicken, cut it into pieces. Finely chop the onion and sauté it in a separate bowl until it is clear. Spread the chicken in a pan with thick walls (better cast iron), add vegetable oil, salt and simmer on low heat under a lid for 20-30 minutes in its own juice. Add the onion to the chicken.

Tomatoes cut into cubes and stew for 3-4 minutes, then add there tomato paste and stew for a few more minutes. Add the tomato dressing to the chicken. If there is not enough liquid in the pan, you can add a little water.

We cut half a cilantro. We add adjika, cilantro, peeled and chopped hot peppers to the chahokhbili. Extinguish the chicken for another 30-40 minutes.

The hen should literally disperse into fibers. Now we add uхоxo-suneli, coriander and chopped garlic. Solim, add the remaining half-pack of cilantro, mix, cover and turn off. Let's stand for 15 minutes and serve.
