Best pork roast recipe. This recipe was my first experience in cooking a whole piece of meat and stayed in favorites to this day. Soft, juicy and ruddy, supplemented with a delicate aroma of garlic, such meat is perfectly complemented with a garnish of potatoes, salad from fresh or baked vegetables.

The most important thing in preparing this dish is to choose good and fresh meat, with enough, but not very large, fatty layers, and a small trick with a bowl filled with water will help us keep the meat as juicy as possible.

Pork (neck): 1 kg
Black ground pepper: to taste

1. We wash the meat and spin the garlic cut along the cloves.

2. Smeared with a mixture of salt, pepper and butter, well rub the mixture into the meat and leave for 10 minutes.

3. On a hot frying pan fry the meat from all sides until a ruddy crust is formed. I sometimes grease a frying pan, but usually the oil that is smeared with meat is enough.

4. A hot piece of meat is wrapped in foil and put in a preheated oven. On the lower level of the oven, using a grate, put the heat-resistant bowl with water. This technique will allow us to keep all the juiciness of meat.

5. Bake the meat at 180-190C for 60 minutes, after, open the foil, stripping the meat from above and a little at the sides and continue baking at the same temperature for another 30 minutes.

6. I really like to complement such meat with slightly sweet or sour-sweet fruit sauces, maple syrup or pomegranate sauce.
